Banana Pancakes Recipe mmmmm

I'm going to share with you my favorite breakfast!! I like banana/blueberry pancakes, a tofulette (I'll explain later) and hash-browns.

Brainless Banana Pancakes (from the book Vegan a go-go by Sarah Kramer)

-1 cup flour ( I like white whole wheat flour)
-1 banana
-2 tsp baking powder
-1 T brown sugar (you can use any sugar but I like brown)
-1 1/4 c milk ( I use almond milk or rice milk)
-cinnamon optional
-I also like to slice up blueberries and throw them in

Step 1. Mash the banana and 1/4 c milk together
Step 2. Mix the flour and baking powder together
Step3. Add flour mixture to banana mixture
Step 4. Add the rest of milk and sugar and mix all together.
Step 5. pour into a non stick skillet on medium heat and cook the pancakes!!
Side note. To keep them warm while you do each pancake, put the oven on about 200 and stick them in  there.

 

 Hash-browns

While you are doing your pancakes, cut up a potato. I like to cut into little matchstick sizes. Put the potato sticks into a pot or skillet. Fill with water. Just enough to barely cover. Bring to a boil and let that cook until tender. (if the water cooks off just add a little more. usually when the water is gone, it's done.) If the potatoes get done before your pancakes, just turn the stove off and put a cover on the pot.

 


Tofulette

There is a restaurant in Venice, called Benice, and they have a tofulette on the menu. It is basically an omelet but with tofu! It's really delicious, so I went home and concocted my own. If you aren't vegan, You can just make a regular omelet for this part! :D

(there can be many variations on the veggies but this is the combo I like)

Normally I start chopping the veggies once I have my hash-browns and pancakes going. When those are done. I throw it into a skillet quick and presto! a great breakfast.

Ingredients
Onion
Garlic
Peppers
Mushrooms
Heirloom Tomatoes (from the farmer's market!!)
Extra Firm Tofu
Daiya Vegan Cheese (the only vegan cheese I like. http://www.daiyafoods.com/ ) (you can use real cheese!)
Olive oil


Step 1. Add a tablespoon olive oil to a super hot skillet.
Step 2. Add onion, peppers, mushrooms .. let cook for about a minute.
Step 3. Add Garlic and tomatoes.
Step 4. I cut a slice of tofu. Then add it to the skillet and smush with a fork to create the scrambled egg look.

Step 5. Mix all together and cook for a few minutes.
Step 6. Pour it out onto a plate and top with cheese.
 

Now!! Finally you have everything ready to bring to the table!!!!
